Spicy Corn Bread

1 c. Cornmeal 1/2 c. Flour 2 T. Baking Powder 2/3 c. Milk 2 Eggs 1 can Cream Corn 1 c. Cheddar Cheese 1 c. Jalepeno Peppers (chopped) 1 can Diced chili's (drained)
Preheat oven to 350 degrees.
Grease an 8x8 or 9x9 square pan. In a large bowl mix all together in order, put in the greased dish. Bake for about 35 to 40 minutes or until golden on the top and a toothpick inserted into the center comes out clean.

Sour Cream Corn Bread

Mix together just enough to blend well:
3/4 cup yellow corn meal 1 cup sour cream 1 cup flour 1/4 cup milk 1/4 cup sugar 1 beaten egg 2 tsp baking powder 2 tbsp oil 1/2 tsp baking soda 2 tbsp chopped Ortega peppers 3/4 tsp salt 1 1/2 cups grated cheese
Bake in 8in. or 9in. square pan at 425 degrees or until done.

9 X 13" pan 1 ½ sticks butter 2 Tbsp honey ½ cup confectioner's sugar 2 cups all-purpose flour ½ tsp baking powder 1 tsp salt 1 Pkg. Yellow cake mix. (Apple pie filling - use spice cake) 1 Pkg. Dry yeast 1 Cup flour 2 Eggs 2/3 Cup warm water 1 Can Cherry pie filling
Use 1½ cups cake mix Add yeast, flour, eggs & water Beat 2 minutes. Pour into greased 9" x 13" pan. Spoon filling over top. Combine remaining cake mix & melted butter and sprinkle over top. Bake 30 minutes at 375 degrees. Drizzle on glaze while warm. 1 Cup confectioner's sugar 1 T. Corn syrup 1 T. Water.

Pumpkin Walnut Bread

1 cup packed brown sugar 2 tsp. baking powder 1/3 cup shortening ½ tsp. salt 2 eggs ½ tsp. ginger 1 cup canned pumpkin ¼ tsp. baking soda ¼ cup milk ¼ tsp. cloves 2 cups flour ½ cup coarsely chopped walnuts
Cream together brown sugar and shortening till light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in pumpkin and milk. Stir thoroughly the flour, baking powder, salt, ginger, baking soda and cloves; stir into pumpkin mixture. Beat 1 minute with electric or rotary beater. Stir in nuts. Turn into greased 9x5x3 inch loaf pan. Bake at 350° for 55 to 60 minutes. Remove from pan. Cool. Wrap and store overnight. Serve with butter.

Pumpkin Skillet Cornbread

2 cups cornmeal 1 cup buttermilk 1 cup cooked pumpkin 1 cup water 1 tsp. baking soda 3 Tbsp. shortening or oil ½ tsp. salt 1 egg, beaten 1 Tbsp. sugar
Mix cornmeal and pumpkin. Add baking soda, salt and sugar to buttermilk. Add water and add to cornmeal-pumpkin mixture. Add shortening and egg and mix well. Pour into greased iron skillet and bake in 400° oven for 35-45 minutes or until lightly browned. Serve hot with butter.

Pumpkin-Pecan Bread

3 eggs 1 ½ tsp. baking powder 1 ½ cups sugar 1 ½ tsp. salt 1 ½ cup pumpkin ¼ tsp. cloves 1 cup plus 2 Tbsp. salad oil ¼ tsp. nutmeg 1 ½ tsp. vanilla ¼ tsp. ginger 2 ¼ cups flour ¾ cup chopped pecans 1 ½ tsp. baking soda 1 ½ tsp. cinnamon
Beat eggs and sugar together well. Add pumpkin, oil and vanilla, mixing thoroughly. Sift flour, baking soda, baking powder, salt and spices. Add to pumpkin mixture and beat. Add pecans. Bake at 350° for 1 hour in 2 well greased loaf pans.
This freezes well. It is good sliced thin and spread with softened cream cheese for finger sandwiches.

1 c. Corn Meal 2 T. flour 1 egg 1/2 t. salt 1/2 t. baking soda 1 1/2 t. baking powder 1/4 c. bacon grease 1 c. (or less) sour milk
Mix ingredients well. Pour into hot skillet that is lightly greased with bacon grease and bake in hot oven about 35 minutes.
These recipes were on the side of a bag of Corn Meal that I bought in Springmill State Park in Indiana. Hope you'll like them!

Irish Soda Bread

1/2 tsp Baking Soda 1/2 tsp Salt 1 tbsp Baking Powder 3/4 cup Sugar 3 1/2 cups Flour 1 1/4 cup Buttermilk 1/4 cup Melted Butter 2 Eggs 1 cup Raisins 1/2 cup Dried Cranberries 2 tbsp Caraway Seeds
Sift together: ½ teaspoon baking soda ½ teaspoon salt 1tablespoon baking powder ¾ cup sugar 3 ½ cups flour Add: 1¼ cups buttermilk ¼ cup melted butter 2 eggs slightly beaten Stir until mixture forms a ball Mix in: 1cup raisins ½ cup dried cranberries 2 tablespoons caraway seeds Knead into ball and place into a well-greased 8-9" cast iron skillet. Mark a cross on top and brush with more melted butter. Bake 350 degrees, 50-60 minutes. Test with toothpick to see if center is completely done.

1 loaf Rohdes frozen bread dough 1 egg garlic salt basil flakes popy seeds
Defrost bread dough & cut into 3 strips, lengthwise. Stretch strips & braid dough onto a greased cookie sheet or 9 x 13 pan.. Beat egg & brush top ofbread. Sprinkle with garlic salt, basil flakes & poppy seeds. Bake in 350 oven for about 25 min.

Beer Bread

3 cups of self-rising flour 3 TBS sugar 1 - 12 oz can of beer butter flavored oil butter
Sift 3 cups self-rising flour with 3 TBS sugar. Add 1-12 oz can of beer (I use non-alcoholic) and mixtogether. Pour into loaf pan that has been sprayed with butter flavored oil. Bake for 45 minutes at 350degrees. Remove from oven and brush with butter. Return to over and bake for 5 minutes. Cool. Serve with soup.

Angel Biscuits

5 cups flour 1 teaspoon baking soda 1 tablespoon baking powder 1 tablespoon sugar 1 teaspoon salt 1 pkg. yeast ½ cup lukewarm water ¾ cup shortening 2 cups buttermilk
Sift dry ingredients together. Cut in shortening like you do for pie crust. Dissolve yeast in water. Add buttermilk and yeast. Stir until all flour is moistened. Cover and store in refrigerator. Roll out desired amount of dough on a lightly floured surface. Cut with biscuit cutter. Place on a greased cookie sheet; bake at 400 degrees for ten minutes.
(This is kind of like a baking powder biscuit, only you don't taste the baking powder.)
